'Glee' Michael Jackson Episode: Rumored Set List Leaks

<P>"Glee" has already dedicated entire episodes to <a href="/news/articles/1637098/madonna-gives-props-glee-episode.jhtml">Madonna</a>, <a href="/news/articles/1648829/britney-spears-glee-episode-everything-need-know.jhtml">Britney Spears</a> and <a href="/news/articles/1639871/glee-lady-gaga-episode-fantastic-matthew-morrison.jhtml">Lady Gaga</a>, and come 2012, it's the King of Pop's turn.</P><P>A rumored set list for the January 24 "Glee" Michael Jackson tribute episode has hit the Web, and it features some of the late singer's greatest hits. <a href="http://perezhilton.com/2011-12-27-glee-michael-jackson-tribute-episode-setlist#.TvoRm0rkk7A" target="_blank">Perez Hilton</a> reports that 14 tracks have made the final cut, although the list has yet to be confirmed by anyone connected with the show.</P><P></p><div class="player-placeholder right" title="'Glee' Cast Members Talk Michael Jackson Episode" id="vid:549513.id:1645343" width="240" height="211"></div><p></P><P>The set list (along with who will perform the track) reportedly includes "Wanna Be Startin' Somethin' " (Blaine), "Bad" (the New Directions and the Warblers), "I Just Can't Stop Loving You" (Finn and Rachel), "Smooth Criminal" (Santana and Sebastian), "Never Can Say Goodbye" (Quinn), "In the Closet" (Brittany and Santana), "We Are the World" (the New Directions and the Warblers), "Black and White" (Puck), "Ghost"/"Monster" (New Directions), "Beat It"/"Billie Jean" (Warblers), "The Way You Make Me Feel" (Kurt) and "Don't Stop 'Til You Get Enough" (Artie).</P><P>This is hardly the first time the show has paid homage to Jackson. Back in 2010, the <a href="/news/articles/1657395/glee-thriller.jhtml">New Directions performed his track "Thriller,"</a> complete with zombie garb, during an episode that aired after the Super Bowl. The show has also previously covered "P.Y.T. (Pretty Young Thing)" and "Man in the Mirror."</P><P>Back in 2010, the cast of the hit Fox show had only imagined what it would be like to have an entire <a href="http://hollywoodcrush.mtv.com/2010/08/09/glee-michael-jackson/">episode dedicated to Jackson</a>. "I would love to do a Michael Jackson episode," Amber Riley told MTV News at the time. "You know, it's so many [songs that I love], but my favorite song by him is 'Human Nature.' I love that song."</P><P>While Riley seemed psyched about the opportunity, castmate Jenna Ushkowitz found the possibility a little more daunting. "That's a scary, scary episode to do," she said. Snoop Dogg Gets NBC Sitcom Deal

Rapper/actor will play a dad in the family comedy show.

<P>He started out as a Long Beach hustler, made his bones as a breakout rap star and has played everything from a loveable stoner to Huggy Bear and an undead gangster in the 2001 horror flick "Bones."</P><P>But is America ready for <a href="http://www.mtv.com/music/artist/snoop_dogg/artist.jhtml">Snoop Dogg</a> family sitcom star? According to <a href="http://www.deadline.com/2011/10/nbc-buys-family-sitcom-starring-snoop-dogg/" target="_blank">Deadline Hollywood</a> the D-o-double G's family comedy project has landed at NBC with a script in the works from veteran comedy writer Don Reo ("Blossom," "Everybody Hates Chris," "My Wife and Kids").</P><P>Snoop, the family man who has managed to strike a balance between lascivious rhyme dropper and pee-wee football coach, will play a dad in the show, which he will also produce. Snoop has already worked with Reo on the Fox sitcom "Brothers," a show about a former NFL player on which he played the role of cousin Kenny the Lawyer.</P><P>He's already done a dry run as the man of the house in his E! reality show "Snoop Dogg's Father Hood," which followed his home life with his wife and three kids over two seasons. Snoop has seesawed between music and movies for years and was recently cast in the title role of the biopic "The Legend of Fillmore Slim," the story of the 1970s San Francisco blues guitarist and pimp who was often referred to as the "West Coast Godfather of the Game."</P><P>Deadline noted that NBC has had mixed success with rapper sitcoms, ranging from the hit 1990s run by Will Smith in "The Fresh Prince of Bel-Air" to the notoriously awful 2001 pilot starring "Thong Song" star Sisqo and comedy icon Bob Newhart.</p>

Chris Brown Debuts High-Grade 'Till I Die' Video

In the weed-inspired clip, Breezy parties with Big Sean, Snoop Dogg and Wiz Khalifa, set to perform at Sunday's MTV Movie Awards.

<P>The 9-to-5 grind can be a real drag, even for superstars like <a href="http://www.mtv.com/music/artist/brown__chris__18_/artist.jhtml">Chris Brown</a>. To take the edge off, Breezy dons a suit and tie and throws a good old fashioned smoke party with <a href="http://www.mtv.com/music/artist/wiz_khalifa/artist.jhtml">Wiz Khalifa</a> and <a href="http://www.mtv.com/music/artist/big_sean/artist.jhtml">Big Sean</a> for his "Till I Die" video, which he released <a href="http://vimeo.com/43146608" target="_blank">online</a> Wednesday night.</P><P>Brown's self-directed clip starts in a run-of-the-mill office with maze-like cubicles, boring brown corkboards and a nasty old water cooler. It's all pretty mundane, that is until a rapping Chris pops out of nowhere, tripping the mail guy and encouraging a Sarah Palin look-alike to photo-copy her bare bottom. "A n---a gonna be faded all the way 'til the a.m.," Brown promises as his shift ends and he takes the elevator from the 420th floor to the building's lobby with fellow stoners Wiz and Sean.</P><P><iframe src="http://player.vimeo.com/video/43146608" width="460" height="260" frameborder="0" webkitAllowFullScreen mozallowfullscreen allowFullScreen></iframe></P><P>The good times continue to roll when Snoop Dogg, along with a few lucky ladies, comes to pick up his homeys in a yellow, old-school convertible. "More drink, pour it up/ More weed, roll it up," Sean raps while Brown harmonizes "I'm high" in the background as they ride through the streets of L.A.</P><P>The happy rappers eventually reach their destination, a foggy frat house with thick, billowing smoke, tons of snacks and fellow marijuana enthusiasts Method Man and Redman, who present Wiz with a golden bong.</P><P>"Till I Die" was actually Khalifa's second weed-inspired video of the day. Earlier Wednesday, the Pittsburgh spitter <a href="http://www.youtube.com/watch?v=-_moYsbcbZ4&feature=player_embedded" target="_blank">dropped</a> a clip for "The Grinder," a jazzy smoke tune from his <a href="http://rapfix.mtv.com/2012/03/14/wiz-khalifa-taylor-allderdice-mixtape-amber-rose/"><i>Taylor Allderdice</i> mixtape</a>. Fans can catch <a href="/news/articles/1685282/wiz-khalifa-mtv-movie-awards-performer.jhtml">Khalifa performing</a> during Sunday's <a href="http://www.mtv.com/ontv/movieawards/2012/">MTV Movie Awards</a> at 9 p.m. ET, introduced by none other than <a href="/news/articles/1686149/charlie-sheen-mtv-movie-awards.jhtml">Charlie Sheen</a>.</P><P>For Brown, "Till I Die" is a far cry all of the other videos he's released from his upcoming <i>Fortune</i> album. "Turn Up the Music," which has amassed almost 40 million views on YouTube, is a heavy dance number, while "Strip" finds Chris in the middle of a sexy house party. The Virginia singer's sultry love-making ode "Sweet Love" comes with a video to match, but "Till I Die" is a fun and welcomed departure from it all. Happy Mother's Day From Justin Bieber, Taylor Swift

Above the Buzz rounds up the best pop songs praising mom.

<P>Mother's Day is just around the bend &#8212; Sunday, to be exact. If you're reading this and that's news to you, you might want to order your mama some flowers and read on for some awesome mixtape song selections courtesy of <i>Above the Buzz</i>.</P><P>Pop music has had a longstanding tradition of cranking out tunes that pay homage to the most important woman in everyone's life: mommy dearest. How could you not look to mom for musical inspiration? She loves you unconditionally, pushes you to be your best, is an awesome shopping buddy and, at one point, let you make that terrible decision of rocking blond highlights back in high school when you really had no business being blonde.</P><P>Basically, she's your friend until the end. So, hit record on your boom box and collect these tunes to let mom know how much you love and appreciate her. (And, yes, I am writing this column from a random Mother's Day in the '90s when people still recorded mixtapes off boom boxes.)</P><P>In 1999, <a href="http://www.mtv.com/music/artist/backstreet_boys/artist.jhtml">the Backstreet Boys</a> released a sappy ballad titled "The Perfect Fan." With touches of gospel on the track, the sentiment thanking their moms for always being supportive reaches it crescendo when the fivesome declare, "I wanna thank you for what you've done/ In hopes I can give back to you/ And be the perfect son." Writing a song about your mom, boys, is certainly a good start.</P><P>Years before BSB dropped their mommy ode, <a href="http://www.mtv.com/music/artist/boyz_ii_men/artist.jhtml">Boyz II Men</a> released "A Song for Mama" in 1997. In the deeply emotional ballad produced and written by Babyface, the guys praise their mamas for showing them the right thing to do. "You're always there for me/ Have always been around for me, even when I was bad/ You showed me right from my wrong/ Yes, you did," they sing. And, we swooned.</P><P>That same year, <a href="http://www.mtv.com/music/artist/spice_girls/artist.jhtml">the Spice Girls</a> released "Mama." Lyrically, it is a bit different from the tracks the boys released. The song is about the girls' growing relationships with their moms, who went from their biggest enemy when they were teens to being their best friends as adults. The ladies sing, "Back then, I didn't know why/ Why you were misunderstood/ So now I see through your eyes/ All that you did was love."</P><P>An equally touching ode from <a href="http://www.mtv.com/music/artist/aguilera_christina/artist.jhtml">Christina Aguilera</a>, "Oh Mother," delves into a more serious topics than those other tracks. Released in 2006, the song reflects on her mother's abusive relationship with her father. The song is incredibly personal, relaying some details about watching her mother get abused. But, in the end, she wants her mom to know this: "So mother, I thank you/ For all that you've done and still do/ You got me, I got you/ Together, we always pull through."</P><P>On the other side of the emotional mom rollercoaster is <a href="http://www.mtv.com/music/artist/swift__taylor/artist.jhtml">Taylor Swift</a>'s "The Best Day," which she dropped in 2008. The track is a mid-tempo jam about all the awesome things her mom does to make her feel better when she's low and all the things her mom taught her. "I know you were on my side even when I was wrong/ And I love you for giving me your eyes/ For staying back and watching me shine/ And I didn't know if you knew, so I'm takin' this chance to say/ That I had the best day with you today," she sings. You said it for all of us, girl!</P><P>With a new Mother's Day upon us, <a href="http://www.mtv.com/music/artist/bieber_justin/artist.jhtml">Justin Bieber</a> is getting in on the action with his new track "Turn to You." Given the tradition he's following in, it's a nice sentiment from a boy who truly loves his mom. And, there's nothing more adorable than a pop star who knows where it's at.</P><P>Because we know where it's at, we have this final message: Happy Mother's Day, mom! All these songs say it all and so much more. You rock! Now, go tell your mom how you feel about her &#8212; she deserves it.</P><P><i>What's your favorite track showing love for mom? Together "Harry Potter" star <a href="http://www.mtv.com/movies/person/264615/personmain.jhtml">Daniel Radcliffe</a> and <a href="http://www.mtv.com/music/artist/adele/artist.jhtml">Adele</a> top the <a href="http://www.thesundaytimes.co.uk/sto/public/richlist/article1014156.ece" target="_blank"><I>Sunday Times</I> Rich List</a> of England's youngest stars.</P><P><embed src="http://media.mtvnservices.com/mgid:uma:video:mtv.com:711056/cp~vid%3D711056%26uri%3Dmgid%3Auma%3Avideo%3Amtv.com%3A711056" width="460" height="260" type="application/x-shockwave-flash" allowFullScreen="true" allowScriptAccess="always" base="."></embed></P><P>Just how big a year did Adele, 23, have thanks to the global smash success of her <I>21</I> album? Consider that in 2012 her fortune has risen to more than $31.8 million from $9.5 million just a year before, according to the list, which will be published at month's end. She placed well ahead of Girls Aloud singer Cheryl Cole, whose fortune was estimated at $19.1 million on the list of the richest British musicians under 30.</P><P>Among the other notable music makers on the list were Florence and the Machine singer Florence Welch, whose worth rose to more than $11.1 million, Taio Cruz ($7.9 million) and a new entry on the chart in a 10-way tie for 14th place, Adele's former BRIT School mate Jessie J ($7.9 million).</P><P>The top 10 was dominated by women, with only two fellas, Craig David (#6, $12.7 million) and Paolo Nutini (#6, $12.7 million) making the cut among top earning ladies Leona Lewis, Katie Melua, Joss Stone, Charlotte Church, Lily Allen, Natasha Bedingfield and Duffy.</P><P>On the acting side, "Potter" star Radcliffe is still far-and-away the richest British actor under 30, with a fortune estimated at $86.1 million, up from $76.6 million last year. Well behind is "Twilight" actor Robert Pattinson (#2, $63.6 million), Keira Knightley (#3, $47.7 million) and, in fifth place, "Potter" co-star Emma Watson ($41.4 million). 'Rock Of Ages' Star Recalls Tongue-Heavy Tom Cruise Make-Out

UNIVERSAL CITY, California — The leading couple from "Rock of Ages," Julianne Hough and Diego Boneta, were joined by Malin Akerman and director Adam Shankman for the final installment of MTV's Sneak Peek Week on Friday, just two days before the 2012 MTV Movie Awards on Sunday.

The "Rock of Ages" cast sat down at 5 Towers on Universal CityWalk, where they not only chatted about the splashy big-screen adaptation of the Broadway show, but also dropped an exclusive sneak peek from the highly anticipated June release, which also features MTV Movie Awards host Russell Brand, Alec Baldwin, Mary J. Blige, Catherine Zeta-Jones and more.

And while Hough and Boneta share a sweet, tender love story in the flick, Akerman's rock reporter and Cruise's rock star Stacee Jaxx, well, their love affair is a bit more torrid.

"I think I'm the only person who can say that Tom Cruise has sang into my ass," she laughed, recalling a scene in which, while in her undies, Cruise actually sings with his face right up to her butt. Is that the Oscars calling?

"It's amazing! I'm very proud of it," she added. "I can't wait to tell my grandfather about it. It was an unbelievable experience. First of all, to be able to do a duet with Tom Cruise and then to undress him and pretend to make love to him on an air hockey table [while singing 'I Want to Know What Love Is']. It was one of the most unbelievable scenes of my life. It was so much fun."

While they do exchange kisses, they redefine the term "French kissing." "People keep saying, 'Oh, your kiss with Tom Cruise!' It was literally like two dogs licking each other," she said. "They call action, we go for it, and it is tongue all over."

So was it hot? Director Shankman explained: "It was so disgusting."

After signing with Interscope, rapper tells MTV News, she decided she wants T.I.'s label to be 'a permanent fixture in my career.'

<P>Iggy Azalea's fall 2011 mixtape, <i>Ignorant Art,</i> drew so much attention that by January she'd already inked a <a href="http://rapfix.mtv.com/2012/01/30/iggy-azalea-interscope-record-deal-the-next-tupac">deal with Interscope Records</a>. A month later, however, T.I. announced that she had also <a href="/news/articles/1680221/t-i-iggy-azalea-grand-hustle.jhtml">signed to Grand Hustle Records</a>, causing a bit of confusion. Although it was an usual situation, Azalea says her deal was restructured to create an ideal contract.</P><P>"I didn't know I was gonna sign to Grand Hustle," Azalea told MTV News, explaining how she managed to stick with both imprints. "There's no way I thought that would happen. Not because I didn't like them, just because my deal was all sewn up, and I restructured the whole thing."</P><P><CENTER><embed src="http://media.mtvnservices.com/mgid:uma:video:mtv.com:760059/cp~vid%3D760059%26uri%3Dmgid%3Auma%3Avideo%3Amtv.com%3A760059" width="430" height="242" type="application/x-shockwave-flash" allowFullScreen="true" allowScriptAccess="always" base="."></embed></CENTER></P><P>The 21-year-old Australian rapper revealed that Interscope chairman Jimmy Iovine was "cool with it," helping her tailor a new deal that pleased all parties involved. "[Jimmy] likes Tip, and they're good friends, so it worked out," she explained. "But it made everybody so confused, because everyone was like, 'I thought she was signed to Interscope; Grand Hustle is with Atlantic.' "</P><P>Iggy said she pushed for the deal to be amended because she had such natural chemistry with the Atlanta rapper and his team. "I love everyone at Grand Hustle &#8212; not just [T.I.]," she shared. "Initially, I wanted to work with him ... because of him, but once I got to Atlanta and I met all of them, I was like, 'Man, I feel so comfortable with all these people and I really want them to all be involved and not just for one album but for the long run.'</P><P>"You always hear stories of labels trying to break things up and things changing, and I just wanted to make sure I had a structured business deal where that was not able to happen," she concluded. "So that's why I asked for it to be restructured and for Grand Hustle to be involved and be a permanent fixture in my career."</P><P>Iggy Azalea's debut album, <i>The New Classic,</i> is tentatively scheduled to drop this summer.</P><P><i>Are you awaiting Iggy's debut? The Wanted Take Shots At 'Scary' Christina Aguilera

'She's a total bitch,' Tom Parker says of Aguilera, who supposedly snubbed the Wanted during an appearance on 'The Voice.'

<P>Any die-hard fan of <a href="http://www.mtv.com/music/artist/wanted_2_/artist.jhtml">the Wanted</a> can surely list innumerable reasons why the rippling, randy group is <i>totally</i> different from any of their Boy-Band predecessors &#8212; they are British-<i>Irish,</i> they sing about booze, etc &#8212; but here's one we've just become aware of: They are totally unafraid of speaking their mind.</P><P>That's because, in an <a href="http://923now.cbslocal.com/2012/04/25/the-wanted-talk-american-success-punkd-new-single-and-more" target="_blank">interview with New York radio station Now FM,</a> they went <i>off</i> on "The Voice" chair-sitter <a href="http://www.mtv.com/music/artist/aguilera_christina/artist.jhtml">Christina Aguilera</a> after she gave them a less-than-friendly reception during their appearance on the show last week. "Who does that?"</P><P>The Wanted were also asked to compare their interactions with Aguilera on "The Voice" with an earlier meeting with "American Idol" judge Jennifer Lopez, when Max George planted a kiss on J.Lo and then the boys <a href="http://www.hollywoodreporter.com/idol-worship/american-idol-wanted-afternoon-delight-308861" target="_blank">openly pined for her hand in marriage backstage</a>. And, as you can probably expect, they definitely preferred one experience to the other.</P><P>"[Aguilera] was a bit scary, to be honest," George said.</P><P>Then, when asked about smooching Lopez, he laughed: "Yeah, well J.Lo's hot, Christina's nothing special."</P><P>Snaps all around. It bears mention that perhaps Aguilera was just having a bad night, because following the show, she also caught heat for <a href="http://www.huffingtonpost.com/2012/04/19/christina-aguilera-denies-dissing-justin-bieber-the-voice-_n_1437631.html" target="_blank">snubbing Justin Bieber</a>. Michael Jackson Immortal Tour: How They Uphold The Legacy

MTV News gets a behind-the-scenes look at the Cirque Du Soleil tribute to the King of Pop.

<P><b>NEWARK</b> &#8212; Since its opening, <a href="/news/articles/1682347/michael-jackson-immortal-cirque.jhtml">Michael Jackson: The Immortal World Tour</a> by Cirque Du Soleil has honored the King of Pop through music, dance and acrobatics 117 times. Night after night, artists celebrate the life of the late Michael Jackson, but how do they take his iconic legacy and put it into a production? When the tour came to New York City this week, MTV News went behind the scenes to talk with the creative forces and performers to find out.</P><P>The artists (all 65 of them) had limited time to train and learn choreography -- an especially difficult feat when it's honoring MJ's signature moves. It was a kind of pressure that creative director Tara Young certainly learned to channel into a positive force.</P><P><CENTER><embed src="http://media.mtvnservices.com/mgid:uma:video:mtv.com:755805/cp~vid%3D755805%26uri%3Dmgid%3Auma%3Avideo%3Amtv.com%3A755805" width="430" height="242" type="application/x-shockwave-flash" allowFullScreen="true" allowScriptAccess="always" base="."></embed></CENTER></P><P>"I think it is a pressure for sure; something I share with the whole building here is that we have nothing to prove, only to share," Young told MTV News. "We have an opportunity to share what Michael would have wanted to share and the pressure is only there to achieve excellence."</P><P>For Felix Cane, a two-time world champion pole dancer who does a captivating performance to "Danger," it was all about using that pressure to help the audience to remember the pop icon. "You are sharing this passion with them, and this love of MJ. There's times in the show when some people and I, myself, might have shed a few tears."</P><P>That pressure never felt as great as when the Jackson family sat in the front row at a show in Montreal, an experience Young described as "inspiring." When asked what MJ would think if he were sitting there with them, Young smiled, "He would feel such a sense of pride of what he has given us to work with. It evokes emotions in people that they didn't even know were going to come out."</P><P>I think everyone feels inspired, which evokes a certain feeling of change," Young added. "You feel a sadness too because he is not with us anymore, and that is an emotion that is wonderful too actually ... just to honor him."</P><P>The tour will continue in North America through the summer, before heading to Europe this fall.</P><P><i>Have you seen Michael Jackson: The Immortal World Tour? Snoop Dogg Gets NBC Sitcom Deal

Rapper/actor will play a dad in the family comedy show.

<P>He started out as a Long Beach hustler, made his bones as a breakout rap star and has played everything from a loveable stoner to Huggy Bear and an undead gangster in the 2001 horror flick "Bones."</P><P>But is America ready for <a href="http://www.mtv.com/music/artist/snoop_dogg/artist.jhtml">Snoop Dogg</a> family sitcom star? According to <a href="http://www.deadline.com/2011/10/nbc-buys-family-sitcom-starring-snoop-dogg/" target="_blank">Deadline Hollywood</a> the D-o-double G's family comedy project has landed at NBC with a script in the works from veteran comedy writer Don Reo ("Blossom," "Everybody Hates Chris," "My Wife and Kids").</P><P>Snoop, the family man who has managed to strike a balance between lascivious rhyme dropper and pee-wee football coach, will play a dad in the show, which he will also produce. Snoop has already worked with Reo on the Fox sitcom "Brothers," a show about a former NFL player on which he played the role of cousin Kenny the Lawyer.</P><P>He's already done a dry run as the man of the house in his E! reality show "Snoop Dogg's Father Hood," which followed his home life with his wife and three kids over two seasons. Snoop has seesawed between music and movies for years and was recently cast in the title role of the biopic "The Legend of Fillmore Slim," the story of the 1970s San Francisco blues guitarist and pimp who was often referred to as the "West Coast Godfather of the Game."</P><P>Deadline noted that NBC has had mixed success with rapper sitcoms, ranging from the hit 1990s run by Will Smith in "The Fresh Prince of Bel-Air" to the notoriously awful 2001 pilot starring "Thong Song" star Sisqo and comedy icon Bob Newhart.</p>

Eater Profiles: After Years of Trial and Error, Chad Colby's Salumi Bar at Mozza's Scuola di Pizza Opens Tonight

Chad Colby is slicing the meat off of a leg of lamb behind the Salumi Bar inside of Mozza's Scuola di Pizza, next door to Mozza2Go, opening tonight. After removing the bone, he separates it at the joint. "This," he says, picking up the femur, "is for my dog, Bruno." It's a comic-book bone, the kind with a knobby knot on each end and enough scrap meat still sticking to it to keep a dog busy for awhile. Lucky dog.

Colby is making lamb salumi. "We have to have a non-pork option on the menu," the former COCHON 555 winner explains. After removing the bone, he begins to separate the meat into pieces, the different muscles becoming distinct with each cut. He's also separating the fat from the meat. As he lays each nugget of flesh in his metal pan, he's measuring out a specific ratio of meat to fat. Just behind Colby, tucked away in a corner, is a small window of glass. Behind that window lies more than three years of work—Colby's pride and joy—the culmination of hours of research into pigs, traditional Italian salumi, and the laws and guidelines of the California State Department of Health and Food Safety.

Mozza's salumi space is the only certified salumi program in Los Angeles County able to serve directly to the public. (The space does not have a license to sell cured meat as merchandise, though the menu items can be taken to-go, from Mozza2Go.) This is monumental for a number of reasons. Colby didn't just have to develop recipes that would be approved by the local authorities, he also had to test how different pigs react to different atmospheres, different levels of humidity and an above-normal refrigerated temperature of 55 degrees. "Refrigerators must be kept at 40, 41 degrees to meet local health inspectors' guidelines. We literally had to prove that our product was safe for consumption at a higher temperature. We had to rewrite the book."

And about that book. HACCP stands for Hazard Analysis & Critical Control Points. It's a program and manual developed by NASA to maintain food at safe moisture and temperature points so as to avoid the growth of food-borne pathogens. "Because, well, when you're in space and you get food poisoning, you just die," Colby notes, bluntly.

State governments have adopted HACCP guidelines for restaurant kitchen ratings, and they're pretty solid, up to a point. Anyone who's ever had brie right out of the refrigerator understands why it's better at room temperature, even though that increases the risk of spoilage. Salumi or charcuterie (the French word for the wide array of cured meats traditionally produced in Western Europe) cannot be produced or cured at 40 degrees, thus the lack of salumi makers in the states. That slightly warmer temperature of 55 degrees is this meat's money spot, where the blend of meat, fat, salt, sugar and enzymes gel into something beautiful like Capicola.

That process takes five months, give or take. "While I was going through the permitting process with the Health Department—and they had to bring in an outside consultant because they didn't know anything about it... and he didn't know anything about salumi—I had a lot of time to test recipes. I kept a log of every pig I butchered." Colby asks a cook to fetch his log, a 2-inch ring binder, bursting at the seams, neatly containing a detailed description, sample recipe and ratio of fat to moisture to meat of each pig he turned into proscuitto, pancetta, rillettes or one of his signature cured meats. Each recipe contains not just the meat and fat proportions, but also the starting moisture content of the meat ("We have to measure it with a $3,000 remote-control-like device."), the percentage of volume lost during the curing process and the rate of bacterial growth (bacteria are a necessary part of the process, but their growth must be controlled). All of Colby's meat comes from Heritage Foods USA, a producer of sustainably-raised meat.

It must be re-emphasized that Colby had to develop all of his own recipes and methods. "People are protective of this craft, which is why it hasn't spread much through the states," Colby says, "the only person who guided me through some of the methods was Michael Sullivan from Tennessee's Blackberry Farm. He basically said, 'well if you're going to go through with this, I'll answer your questions.'" But no one shared a recipe or any specifics, "It was a lot of trial and error. You have to anticipate the taste of something after it's been in a cooler for five months. It's like wine or beer."

Colby is excited and uncertain about the first Salumi Bar night. The 44 seat space opens to the public tonight, welcoming overflow from the Osteria and Pizzeria. Colby hopes that the Salumi Bar can one day stand alone, and be open every night for casual groups of diners (menu here). For now, try it every other Thursday, starting at 6 PM.
